Gum Arabic, also known as gum sudani, acacia gum, Arabic gum, Senegal gum and Indian gum, and by other names is a natural gum consisting of the hardened sap of the acacia tree, the Acacia Senegal Vachellia (Acacia) seyal.
Source of Arabic Gum
The Acacia Senegal tree grows all over Africa and even on the Indian subcontinent. Most of the world’s gum arabic, however, comes from Sudan, where a thick belt of Acacia Senegal trees stretches all across Sudan. Reportedly Sudan is the biggest exporter of gum arabic despite its tough extraction process.
Gum Arabic and Nutrition
It is used to prepare healthy meals and diet foods (especially slimming diets and diabetic diets) because it is rich in fiber. It also helps the body to get rid of toxins and waste. It is also very useful for kidney patients, failure and renal insufficiency. It helps to treat and cure kidney failure by reducing the proportion of urina in the blood. It also reduces glucose absorption rate, which in turn contributes to the treatment of diabetes. It also contains other health and therapeutic benefits for gastrointestinal patients. It can help treat burns and osteoporosis, acute diarrhea, and bleeding cessation, as well as vital hepatitis A, B and C.

Uses
Gum arabic has so many uses because of its polysaccharides and glycoproteins gives it the properties of a glue and binder that is edible. The biggest consumers of gum arabic are the food industry but its uses are varied.
- Used as stabilizer, emulsifier and thickening agent in icing, filling, soft candy, chewing gum and other confectionery and to bind the sweeteners and flavorings in soft drinks. Sometimes is used in cocktails to prevent the sugar from crystallizing and providing a smooth texture.
- Used as a binder for watercolor paint.
- Used as a binder as it helps the glaze adhere to the clay before it is fired, and it also acts as a deflocculant, increasing the fluidity of the glaze.
- Used it to make a colored photographic emulsion.
- Used to protect and etch an image in lithographic processes. Gum is also essential to paper lithography, printing from an image created by a laser printer or photocopier.
